I can only think of a very few:
Rietze: Audi Avus Quattro Audi Spyder
EuroModell: Ferrari Mythos
Miber: Ferrari Mythos (?)
BS-design: Lincoln Futura
Comet Miniatures: Rolls-Royce FAB-1
What did I miss?

BS Design made kits of the Audi TT and TTS showcars, too. Lion Models announced a Chrysler Atlantic two years ago but it is not yet available.

Re the Chrysler Atlantic - I had almost completely forgotten about that. I figure that that would be a problem, most showcars don't really last long enough in the popular consciousness for people to buy models of them. Oh, and naturally (duh) the Wiking MB C111

Dear Sirs: Hmmmm............................I sorry to say,but Maisto is the one who releases-almost immediatelly-the show cars as they became avalaible. They have done,up to now the Buick Bengal,Saturn Sky,Chevrolet Belair,Cadillac Vizon,Hummer H2 SUT,Chrysler Atlantic,Pontiac Rev and Piranha,Jeep Jeepster,Cadillac Cien and many more.Thing is,when a concept is unveiled,Maisto may be modeling it.Of course, all of the vehicles here are on the 1/64 scale range and some of these are made on the large scales. They also modeled two Oldsmobile concepts, and the Saturn that became their current SUV. Some of this concepts were done on a more detailed casting. Too bad that these were not 1/87......

At least two old Schuco models: 1954 Ford FX Atmos and 1956 GM Firebird II. And one interesting Focus model: 1954 Chevrolet Corvette station wagon.

Masudaya did the Maserati Boomerang, Homann did the Porsche Boxster showcar,
I also have several showcar Corvettes released by Galoob (I believe that is who made them). Among them is the Corvette Indy.

Dear Mark:
Galoob was the company who manufactured the Micro Machines and their Corvette was around 1/82 scale.
Now I am noticing that the big HO companies did not bothered to release concept cars.......

To me, it seems kind of unnecessary to release showcars in 87 scale when there are so many "real" cars that remain unavailable. It's kind of bizarre to be able to buy a Mythos but not a Citroën SM, if you know what I mean.

Dear Sirs:
There are others as well such as the Dodge Power Wagon,Mustang Mach III,Mid-engined Corvette and many others.AMC also produced a show car that was reproduced by Mattel, but not always it had the right name.AMC did not had the money to produce the show car.

Both GSP and US-models also offered the Boomerang. I wonder if it was based on the Masudaya model?
And I suppose that the Euromodell Dodge Viper is actually the prototype rather than the production version - the rims are the same as on the showcar.

Dear Sirs:
Maisto is by far the one who modeled the highest amount of show cars.Unfortunately, none of these are 1/87 scale.

At least two old Schuco models: 1954 Ford FX Atmos and 1956 GM Firebird II. I had both of those when I was a young boy. Of course, they are long gone now. I know many of the old Schuco moulds were destroyed some years ago, but I keep hoping Schuco will include the Atmos and Firebird in the recreations of some of their old models.

A concept car that would be a wonderful candidate for 1:87 is the 'new' Cobra (new to me?). Just watched a program on the developement of this beast.
